Facebook doesn't come pre-loaded on the S3, you need to download it from the Play Store. As for e-mail, what e-mail provider are you using? The default e-mail app pre-installed should be able to access the commonly used e-mail providers.

Much of the time, I am in range of wi-fi, how easy is it to get the phone to use wi-fi first?

Can the phone be set up to use the cell network for all phone calls, and use wi-fi for all data?

Yes. The data connection can be disabled while the cell network stays connected. Under System Settings in Android 4.0.4 (Ice Cream Sandwich), click on Data Usage and then turn the Mobile data switch to OFF. After doing that, you'll only be able to have data access when wi-fi is on. Wi-fi connects quickly and you can set the phone to disable wi-fi when the screen is off to save battery life. The Data Usage tab can also be used to set caps on cellular data usage (I use mine to keep track of if I go over the 4GB data cap on the $30 plan).
